Grape varieties: Pinot Nero and Chardonnay
Harvest: the grapes are hand-picked and pressed whole to guarantee the best possible quality. Only the free-run must, produced during the first stages of pressing, is used to make the base wine for Alta Langa.
Vinification: the base wine is bottled, for second fermentation, the spring after harvest, adding sugars and yeasts in compliance with the traditional method. The bottles are stacked and stored for at least 30 months, to guarantee the finesse and complexity characteristic of this sparkling wine.
