Exposure: west

Vinification: the grapes are hand-picked and pressed whole, and after brief maceration the must and skins are separated. The must ferments in stainless steel tanks at a low temperature to preserve the bouquet.

Prise de mousse: second fermentation in compliance with the traditional method at a low and constant temperature, to favour the fine and persistent perlage.
